Jersey Mike’s names Stacy Peterson president and COO

Jersey Mike’s Subs has appointed Stacy Peterson as its new president and chief operating officer. A seasoned veteran of the restaurant industry, Peterson will be responsible for leading the company’s U.S. operations, as well as overseeing its marketing and technology initiatives. Her role will be focused on driving innovation and operational excellence to support the Manasquan-based sandwich chain’s continued growth.

Peterson joins Jersey Mike’s after serving as CEO of Jeni’s Splendid Ice Creams. Prior to that, she spent nearly a decade at Wingstop, where she held several senior positions, including Chief Revenue & Technology Officer. Jersey Mike’s CEO Charlie Morrison, who previously worked with Peterson at Wingstop, stated that her expertise in digital, marketing, and operations will be instrumental in accelerating the brand’s growth.

With more than 3,000 locations operating in the U.S. and Canada, Jersey Mike’s is one of the fastest-growing fast-casual restaurant chains in the country. Peterson expressed her enthusiasm for joining the company, noting, “Jersey Mike’s has built something truly special—a brand that connects with communities and delivers an exceptional experience that customers crave.”
