Symphony Pastries, a Moorestown-based family-owned manufacturer of premium European-inspired and traditional American desserts, announced today its acquisition of the pastry division of Classic Cake.
The strategic move unites two established Greater Philadelphia-area bakery operations, significantly expanding Symphony’s product capabilities and market reach across foodservice, hospitality, and retail sectors.
Led by brothers Brett, Barry, and David Kratchman, Symphony Pastries has seen steady growth since the trio acquired the company in 2024. While the acquisition brings Classic Cake’s pastry production under the Symphony umbrella, Barry Kratchman will continue to separately operate Classic Cake’s landmark Cherry Hill retail bakery and its wholesale/private label cheesecake production facility in Philadelphia.
Key highlights of the acquisition
- Expanded Product Portfolio: The integration merges Symphony’s European craftsmanship—featuring tiramisu, Opera Cake, and fruit tarts—with Classic Cake’s traditional American dessert offerings.
- New Innovation Initiatives: Symphony is launching a Private Label Innovation Program focused on custom flavor development, proprietary concepts, branding, and flexible production for mini desserts and dessert bars.
- Looking Ahead to 2027: The acquisition precedes Symphony’s upcoming state-of-the-art production facility, slated to open in 2027, which will feature new sheet cake and dessert bar lines to support national distribution and high-volume partnerships.

Symphony currently serves a wide range of operators, including distributors, restaurants, hotels, airlines, and cruise lines. Company leadership emphasizes that the expansion is designed to enhance customer collaboration while preserving the artisanal craftsmanship behind every product.
